Making Salsa!

Making Salsa- with tomatoes fresh from the garden!

We have planted a large garden this year filled with lot’s of fruits and vegetables in it. This year, as every year, we seem to have tons of tomatoes….we can never eat them fast enough!! Even after giving away lot’s to friends and family…there are still lot’s to use up.  There are so many things you can make with tomatoes, but one of my favourite things to make with tomatoes from the garden is Salsa!!!

Below you will see a new salsa recipe that I have tried making. I got this recipe from a friend who says this is one of her favourites. After trying it….I must say, it is pretty yummy!! Smile

Salsa Recipe and Directions:

  • 8 cups tomatoes, peeled, chopped, and drained
  • 2 1/2 cups onions, chopped
  • 1 1/2 cups green peppers
  • 1 cup jalapeno peppers, chopped
  • 6 garlic cloves, minced
  • 2 teaspoons cumin
  • 2 teaspoons pepper
  • 1/8 cup canning salt
  • 1/3 cup vinegar
  • 1 (15 ounce) can tomato sauce
  • 1 (12 ounce) can tomato paste

  1. Mix all together and bring to a slow boil for 10 minutes.
  2. Seal in jars and cook in hot water bath for 10 minutes.
  3. This is a medium salsa. This is also a chunky salsa, so if you want a smoother salsa cut your veggies into smaller pieces.
  4. Yields 3-6 quarts or pints.

We  like our salsa HOT, so I added more jalapenos….and I think when I make it again we will add even more. The salsa had a nice taste to it, but we like the heat!! 🙂
I was able to get 5 quarts out of this recipe with a small amount extra that we set aside to enjoy immediately!! It was so yummy!!

This year we have also enjoyed making homemade dill pickles as well as canned peaches and pears.
