The Importance of Vitamins….filling the gap!

We all try to eat healthy, making sure we get our fruits and vegetables, but have you ever thought about the vegetables that you are eating?? One would think a carrot is the same carrot that was around 40 years ago, but that’s unfortunately not the case.

Over the years, due to technology advances and society demands, farmers have been able to produce over two times the amount of fruits and vegetables than before. What you need to ask yourself is how are they able to do this and what is this doing to our food.

It’s great to know we have an abundance of food, however we have now taken away some of the nutritional value. Studies have shown a decline in protein, calcium, phosphorus, iron, riboflavin or vitamin B2, and vitamin C in 43 different fruits and vegetables. CRAZY isn’t it?? We try to make an effort to “do the good thing” by eating healthy, but unfortunately the nutritional value of our food is not what it used to be.

Even Organic produce, which tries to not use pesticides and fertilizers-using manure instead, which improves the soil quality but takes more time to produce and cost more. Additional money that not all of us are able to put out, with grocery bills rising all the time.

We have a fairly large garden at our home and we try our best to put quality soil on top, as well as regularly manure and I can say that yes, its a timely process!! I’m no pro by any means but the work seems worth it to ensure we are getting higher quality produce with higher nutrition- in the convenience of our backyard!! Not to mention, avoiding pesticide and chemical contamination!
